zucchini spice cake

Ingredients zucchini spice cake

3 Eggs
1 cup Vegitable Oil
2 tsp Vanilla
2 cup Flour
1 3/4 cup Sugar
2 tsp Cinnamon
1 tsp Nutmeg
2 cup Shredded strained zucchini (or apples or carrots)
1 stick of Butter
1/4 cup Brown sugar
1/2 cup Milk
4 tbsp Apple butter (or applesauce of thats all you have)

how to make zucchini spice cake

Strain all liquid from zucchini

In a mixing bowl beat together eggs, oil, milk and vanilla

Add flour, sugar (white and brown) , cinnamon, and nutmeg in a sifter

Sift dry ingredients into the bowl

Beat together

Fold in zucchini (or apples or carrots) and apple butter (or sauce)

Pour into greased, floured sheet cake pan

Bake 1 hour at 350°

After removing from oven, while hot, spread butter on top of cake
