Ingredients sriracha potato salad
3 lb red potatoes; cut in fourths
1 red onion; large dice
1 red bell pepper; medium dice
1 yellow bell pepper; medium dice
1 head celery; medium dice
3 clove garlic; minced
1 tbsp ginger; finely minced
1 bunch basil
2 cup mayonnaise
1/2 cup Sriracha
1/2 cup rice wine vinegar
2 tbsp paprika
1 salt and pepper
how to make sriracha potato salad
Boil potatoes until fork tender. Submerge in ice water to stop the cooking process. Drain. Pat dry.
Combine mayonnaise, Sriracha, vinegar, and dry seasonings in a large mixing bowl. Toss potatoes and veggies with dressing and fresh basil.
*Optional: Sweat veggies and garlic in olive oil until tender.
