Ingredients quinoa salad
Salad
1 cup quinoa
2 cup water
2 tomatoes chopped
1 small red bell pepper chopped
1 small red onion chopped
1 can corn rinsed
1 can black beans rinsed
1/2 cup cilantro chopped
3 clove garlic minced
1 jalapeƱo seeded and diced
Dressing
1/3 cup olive oil extra virgin
1 tbsp ground cumin
2 juiced limes
1 tbsp Sea salt
how to make quinoa salad
Bring water up to boil, add quinoa, then turn down to a simmer for 10-15 minutes, until done.
In large bowl, combine all salad ingredients, stir to combine
Prepare dressing by whisking ingredients for 1-2 minutes. Pour over salad and stir well to combine.
** I prefer extra lime juice and cilantro! Make it your own!*
