Ingredients vickys eton mess traditional version
4 meringues from my attached link
500 grams strawberries hulled
400 ml double (heavy) cream or see my link below for whipped coconut cream which is what I use
how to make vickys eton mess traditional version
Puree half of the strawberries and chop the other half roughly
Whip up the cream, following the recipe below if using the dairy-free version
Snap the meringues into pieces, reserving some pieces for garnish
Stir the strawberry puree, 3/4 of the chopped strawberries and the crushed meringues gently into the whipped cream
Serve with the rest of the chopped strawberries sprinkled over and a dusting of reserved meringue crumbs
