Ingredients creamy chicken and spinach pasta
1 tbsp oil
1 stick of butter
1 large onion chopped
3 cloves of garlic chopped
dash of salt & pepper to taste
bunch of fresh spinach leaves
500 grams Penne or any pasta noodle cooked as per instructions
1 can mushrooms sliced/chopped
1/2 kg chicken breasts (boneless & skinless) sliced
2 cups of heavy cream
1 cup evaporated milk
100 grams cheddar cheese grated
50 grams mozzarella cheese
how to make creamy chicken and spinach pasta
Add oil and 2 tablespoons of butter in skillet and heat to medium. Cook chopped onions until translucent and garlic until golden brown for about 3-5 minutes.
Add chicken breasts and cook for about 10 minutes.
Add mushrooms and cook for 3 minutes. Pour cream, milk and cheese. Simmer in low fire for about 10 minutes. Make sure to stir to every 3 minutes to avoid the cream from burning.
Add spinach and cook for 3 minutes or until wilted.
Serve over cooked pasta (use remaining butter).
