Ingredients amies pasta alle zucchini


2 clove garlic thinly sliced
2 tbsps. olive oil
5 basil leaves
1 salt and freshly ground black pepper
1 tbsp finely chopped flat-leaf parsley
6 medium fresh zucchini sliced lenghtways
1/2 cup grated parmesan
320 grams pasta lunga o spaghetti

how to make amies pasta alle zucchini


Heat the oil in a large, heavy based saucepan over medium heat. Add the garlic and cook until it becomes golden brown.


Add the sliced zucchini and cook for 20-25 minutes. Gently warm, stirring occasionally, until becomes soft and tender.


Stir in the basil and parsley. Season with salt and pepper. Add and mix well the parmesan.


Meanwhile, bring a large pot of water to a boil. Add a tablesppon of salt and a splash of oil.


Cook the pasta according to the packet directions, until al dente. Drain and return to the pan.


Pour sauce (cooked zucchini) over the pasta and toss to combine. Serve scattered with parmesan. Serves hot!
